Craig is a Founding Charter Member as well as the Inaugural President of the Lafayette-Acadiana chapter of Legatus from 2013-2015. During that period, Craig was honored to receive the International Legatus Chapter Officer of the Year award. In January of 2019, Craig was elected to the International Board of Governors for Legatus. In January of 2020, Craig was awarded the Legatus Ambassador of the Year for his work with Holy Trinity Catering Inc.

Craig can often be seen cooking several hundred plates of jambalaya in a pot custom made and passed down to him from his father. 

Mr. Randy Romero is the CEO of M.A. Patout and Son Limited, LLC, who own and operate a sugar mill in Jeanerette, LA. They have partnered with the Guardian Growers horticulture program and we now grow their sugarcane on campus.
